You can’t beat a bit of baking!
Despite the complete lack of available baking products during lockdown, I have managed to rustle up a few goodies for the family to enjoy. I appreciate that we will probably all be coming out of lockdown a few stone heavier, if not for the baked good then it will definitely be for the wine! I haven’t been completely selfish with my baking though… I made a few deliveries to the neighbours and to some friends and family. So, as well as the mini victoria sponges pictured above, here is a little insight into what I have been up to…
Cupcakes…
These were the most delicious cupcakes I have ever EVER baked! The flower topped ones were vanilla sponge with vanilla buttercream, nice and simple. The others were vanilla sponge with nutella buttercream and a mixture of ferrero rocher pieces or bueno pieces to decorate. Yum!
30th Birthday…
People still have birthdays during lockdown, right? I took these goodies into work for a 30th birthday. Vanilla cupcakes, some super gooey brownies and some melt-in-the-middle cookie pies. Lush!
60th Birthday…
And finally, I made a 60th birthday cake for my wonderful dad.
So that just about sums up the entire month of April, in lockdown. Keeping myself busy and fully stocked with goodies while I set to work on book number two!
